Sencha (煎茶) is Japan’s signature style of green tea, crafted from leaves grown in full sunlight. After harvesting, the leaves are quickly steamed to halt oxidation, then carefully rolled and dried—a method that preserves their vibrant green hue and fresh, grassy aroma.

Unlike shaded teas such as gyokuro or kabusecha, sencha develops a lively balance of brightness, gentle bitterness, and savory umami, reflecting the terroir and climate of its growing region. The needle-shaped leaves yield a golden-green liquor with a clean, refreshing taste that can range from brisk and crisp to soft and sweet, depending on the harvest season and steaming time.
